Here is an easy way to make some tasty bourbon chicken with little to no cooking skills required. Prep time is about 5-10 minutes. Cook time is around 30 minutes with very little required interaction. Feeds 4-6 people.
3 boneless skinless chicken breasts
1/2 cup of brown sugar
1/2 cup of bourbon
1/2 cup of soy sauce
1 tbsp garlic powder
1 tbsp minced onions
1 tsp red pepper flakes
1 tsp black pepper
*Please note: I always just eyeball the ingredients based on what I like, so some experimentation to find your perfect mix may be in order.*
Directions
1. Place thawed chicken and all other ingredients in a 1 gallon zip lock bag. Shake gently to make sure ingredients get mixed well.
2. Marinate for 4-8 hrs as desired.
3. Pour liquid contents of bag into a large frying pan or sauce pan
4. Dice chicken into half inch cubes
5. Add chicken to frying pan
6. Bring contents to a boil
7. Stir occasionally to make sure nothing sticks to the pan
8. Continue to boil until most of the liquid has boiled off (Chicken should turn a dark reddish brown)Serve over rice and/or sauteed peppers
